Savory Goat Cheese and Basil Breakfast Sandwich

I love a good breakfast sandwich and this is one I find myself making quite often. I've got it down to a science and can make it now in 10 minutes flat, making it a great breakfast for on the go! Goat cheese is one of my favorites, but definitely a splurge, so I often make it with low-fat mozzarella instead.  Here is what you'll need.

Ingredients:

- 1 egg and 3 tbsp egg whites

- 1 tbsp minced chives

- 1 tbsp chopped basil

- 1 whole grain English muffin 

- 1 oz goat cheese or low-fat mozzarella

Instructions:

Beat egg and egg whites together.  Heat pan over medium heat. Mist pan with cooking spray and add egg mixture. Sprinkle chives, basil and cheese evenly over the eggs.  After 3-4 minutes (or when eggs are somewhat cooked), slice down the middle of the eggs and flip each side. Continue cooking until desired doneness; 1-3 minutes depending on the heat. Fold egg halves into thirds and lay on top of warmed English muffin.
